Tiramisu..




err, will post recipe if ppl say this is sedap.. i was inspired by Spot.. but, i kay khiang and alter the recipe on my own for the VERY first time.. aiyo, din't know it will be so short hence all the ladyfingers stick out so much.. ke ke.. this better be sedap.. heh..

on leave today, going JB to share this cake with my mommy.. :P.. oh i hv to slice the ladyfingers in half cos ken kept eating while i'm assembling.. so worried i run out of them!.. cis!.. hehe..



Recipe: Simple Tiramisu

Ingredients:
90 ml water
30 g of sugar
2.5 tbsp of instant coffee

120 ml (or 0.5 cup) heavy whipping cream
227.5 g mascarpone cheese
1/4 cup granulated sugar
1.5 tbsp rum (brandy also works well)
~20 lady's fingers (a light, oblong italian cookie with powdered sugar on one side)
cocoa powder

Method:
Coffee syrup:

  • boil 90 ml of water with 30 gm of sugar and 2.5 tbsp of instant coffee.
  • leave to cool and chill.
Filling:
  • Whisk cream (120ml) to stiff peak. Set aside.
  • Mix 227.5g mascarpone cheese, ¼ cup castor sugar and 1.5tbsp rum/brandy.
  • Fold whipped cream into cheese mixture gently.
Assemble the cake:
  • Use aluminum foil to wrap bottom of the cake ring and place it on a cake board.
  • Put one piece of the sponge cake (I'm using ladyfingers) in the mould. (So, i arrange the ladyfingers ard the ring and at the bottom)
  • Brush the coffee syrup generously onto the whole sponge cake (or ladyfingers) and then pour half cheese mixture on it. Dust with cocoa.
  • Put the 2nd layer of cake (or more ladyfingers) on it and again brush with coffee syrup and pour the rest of the cheese mixture into it.
  • Level the cake and put into freezer to freeze it. Can leave cake overnight or about 3-4 hours to harden it.
  • Unmould the cake and spoon some cocoa powder in a sieve to sprinkle on top of cake. If cake is keep overnight in freezer, before serving leave it outside for a while for easy cutting.

Biow's note:

  • Lee Lee said, "to unmould any cake that is in the freezer (those really frozen hard type) here is what you can do: Tear away the aluminum foil, place cake on cake board, use a hairdryer to blow on the side of the mould turning the mould round. Do that for a few mins and try lifting the cake ring up, the cake should slide nicely onto the cake board."
